Sometimes life is complex and that’s when the food should be simple. Nothing beats a perfectly roasted chicken, a dish of creamy mashed red potatoes and some roasted brussel sprouts.
A rustic country dinner was the perfect treat last night as the temperature started dropping and the rain started falling. Add a nice glass of wine and a roaring fire and it’s almost perfection.
For our roasted chicken we like to make a basting glaze of melted butter, garlic, sea salt, cracked black pepper and paprika. Baste the bird, then cover with foil and place in the oven on 350* for about 1.5 hours (depending on size) continue basting throughout, then remove aluminum foil baste again and let it cook for another 20 mins or so to get that golden brown color. Your house will smell amazing and it is so simple.
The trick to the potatoes is to add some rosemary and chicken broth to the boiling water and never add cold liquids when ready to mash (slightly heat the milk or broth before adding.) Leaving the skin on the red potato adds a great earthy taste and texture.  Steam the brussell sprouts with chicken broth and a tiny bit of sweet cream butter. Easy breezy.
